The popularity of harvesting fruits for the winter, including apricots, without sugar and cooking, is constantly increasing, as many recognize them as more beneficial to health. Most often, fruits are simmered for a long time in a steam bath or boiled many times, because it is difficult to maintain such preservation. In this recipe, we prepare apricot jam without cooking and sugar, replacing it with honey. This jam is great for dietary, children's and proper nutrition.

For the jam, choose firm, ripe and undamaged apricots. Measure their quantity and honey in the proportion indicated in the recipe.

Rinse the apricots thoroughly and wipe dry with a napkin. Then break the fruit into halves with your hands and remove the pit. Transfer the prepared apricots to a dry, clean dish, and mash them with your hand or with a potato crush.

Your apricot puree will turn out to be patchy, as it should be.

Then add the calculated amount of honey and preferably liquid honey to the apricot mass.

Mix apricots with honey well with a wooden spatula or spoon. Leave this mass for 1 hour at normal home temperature.

After an hour, stir the jam again and put it in the refrigerator or other cold place for at least 11 hours. During this time, the jam after about an hour, mix well again for 2 minutes. Gradually, it will take on a thick and uniform consistency.
