For lovers of apricot blanks and those housewives who are limited in time, there is a good recipe for apricot jam without cooking. It takes 2.5-3 hours to cook without much effort. The principle of preparation is 3-fold aging of apricots in hot sugar syrup for 10 minutes. Citric acid is added to this jam. Store the jam without cooking only in a cold place. This method is convenient for harvesting a large number of apricots, and the jam is not only tasty, but also beautiful.

Ingredients

Cooking process

step 1 out of 7
Sort the apricots for this harvest, removing damaged and overripe specimens. Then rinse them thoroughly with running water, with a sharp knife so as not to crush the fruits, cut them into halves and remove the bone. Place the prepared apricots in a deep bowl.
step 2 out of 7
To boil the syrup, pour the calculated amount of sugar into a saucepan, pour clean water and add citric acid in the proportion indicated in the recipe, otherwise the jam may be sour.
step 3 out of 7
Place the saucepan on the stove and bring the syrup to a boil with constant stirring. Then boil the syrup for 15 minutes over low heat. During this time, the sugar should completely dissolve.
step 4 out of 7
Pour the boiled hot syrup over the apricot halves and leave them for 10 minutes to infuse.
step 5 out of 7
After this time, pour the syrup from the apricots through a colander or sieve into the same saucepan and boil over low heat for another 10 minutes. The procedure for boiling the syrup, with a 10-minute infusion of apricots, must be done 3 times.
step 6 out of 7
After pouring the apricots a third time, leave them in the syrup for 25 minutes. Do not stir the fruits, otherwise their integrity may be violated, and if necessary, simply turn the pan from side to side several times so that the apricot halves are completely covered with syrup.
step 7 out of 7
After the last infusion time has elapsed, pour the apricot jam without cooking into sterile jars and seal it tightly. Then put the jars on the lids, cool under a warm blanket and then transfer to storage in a cold place.
Happy and tasty preparations!
