Azerbaijani apricot jam with seeds

Pits are obtained from whole apricots. From them, the nucleoli are taken, which are placed back into the apricots. Sugar syrup is prepared in a saucepan, where fruits are sent and cooked in several approaches. It turns out a very tasty amber-colored jam.

First, prepare the apricots. Pour a liter of water into a deep container and add a tablespoon of soda. We mix and send apricots there. We leave for 3 hours. During this time, all the garbage will come out of the fruit.

Next, rinse the apricots under running water and put them in a colander. With the help of a wooden stick we pierce them and take out the bones. This is done to keep the fruit intact.

We remove the shell from the seeds so that only the core itself remains. We put them back into the apricots.

Cooking syrup. Pour water into a deep saucepan or other suitable container, add granulated sugar and cook until it completely dissolves.

Immerse apricots in sugar syrup. Turn off the heat and let them stand for 8 hours.

Now let the jam boil and simmer the fruit for 10 minutes. Turn off the heat, let it cool completely and repeat this step 2 more times.

At the end, add the juice of half a lemon and cook for another 5 minutes. The jam is ready.
