Apricots for rolling are chosen moderately ripe and juicy. There is an explanation for this: unripe fruits give the dessert an unpleasant bitterness and do not have a fragrant smell, overripe apricots are boiled, and the delicacy becomes cloudy.

Since we will cook apricots in syrup without sterilization, we will first deal with processing the jar and lid for rolling the dessert. They must first be cleaned with baking soda and rinsed, and then the can is sent to the oven for sterilization. It is better to scald the lid with boiling water.

While the cans are being heat-treated, we have time to deal with apricots. Fresh fruits must first be sorted out: discard rotten and unsuitable fruits. Then we thoroughly wash the apricots, and absorb the excess moisture with paper towels. Cut into halves to extract the bones.

Put the apricot slices in jars. Now you need to prepare the syrup. To do this, we need a saucepan, into which we pour purified water (400 ml). Bring the liquid to a boil and add sugar.

Stir the syrup until the sugar crystals dissolve. Cook for 5 minutes after boiling. Pour apricots in a jar with hot syrup.
