Adjika from bitter pepper without cooking

Uncooked hot pepper adjika is a spicy addition to meat dishes, which can increase the spiciness of your favorite dishes. By the way, this same degree of pungency during the cooking process can be adjusted independently: keeping the pepper seeds, you will make the appetizer more piquant. By the way, when working with hot peppers, it is recommended to use gloves to avoid burns.

Ingredients

Cooking process

step 1 out of 6
First of all, the bitter pepper must be thoroughly rinsed by placing it in a colander. In the event that rotten or severely damaged areas are found on the fruits, they should be disposed of by cutting with a knife.
step 2 out of 6
The next step is to lightly dry the fruits, then cut them into large pieces. We send the chopped pepper to the blender bowl. In the event that you do not want the appetizer to turn out too hot, remove the seeds from the hot pepper.
step 3 out of 6
We send peeled garlic cloves to the pepper blender bowl. Then grind the vegetables. We should have a mass of puree-like consistency.
step 4 out of 6
Now we transfer the resulting mass into a separate deep bowl. We also send sugar, salt and vinegar there. Mix everything thoroughly, after which we let the vegetable mass brew for an hour.
step 5 out of 6
In the meantime, prepare the jars. They should be rinsed with baking soda, rinsed well, then steamed for twenty minutes. Boil the lids for five minutes. After a couple of hours, we lay out our adjika in sterilized jars and roll up the lids.
step 6 out of 6
It is recommended to store such a workpiece in the refrigerator.
