Adjika from zucchini with apples

If you have never tried adjika zucchini, and even with apples, then this is your chance to enjoy an unusual and quite spicy seasoning that will certainly go with any meat dishes. After I once cooked this adjika, I no longer buy various ketchups and sauces in stores.

Wash the zucchini, pat dry and peel with a vegetable peeler. Use a tablespoon to remove the core. Wash and core the apples, bell peppers and hot peppers. Peel the garlic, rinse under water. Wash and peel the carrots with a vegetable peeler. Chop all peeled ingredients and mince.

Put the chopped ingredients in a metal bowl with a thick bottom, in which you will cook adjika. Add the required amount of granulated sugar, table salt and vegetable oil. Put the container with vegetables over medium heat and bring to a boil. Reduce heat and cook adjika for about 35-40 minutes, stirring occasionally.

Wash the jars thoroughly and sterilize in the microwave or oven. Boil the lids in a saucepan. Pour the required amount of vinegar into adjika, mix thoroughly and immediately remove from heat. Spread hot zucchini adjika with apples in sterile jars. Roll up sterile lids with a seaming machine.

Turn hot jars of zucchini adjika with apples upside down. Wrap in a warm blanket and leave to cool completely for about a day. Then store in a cool, dark place. The remaining adjika can be tasted after cooling completely.
