Adjika from zucchini from the "Always not enough" series is a spicy aromatic sauce made from zucchini, tomato paste, garlic and hot pepper. Zucchini must be twisted in a meat grinder so that the sauce is with "grains" of vegetables. Hot peppers should be taken fresh or dried, but not ground.

Wash the zucchini under running water, peel and seeds and cut into large pieces. Peel the chives.

Twist the zucchini in a meat grinder with the largest wire rack and immediately into a special saucepan for stewing vegetables. Twist the peeled garlic as well.

Put the tomato paste on the zucchini, the amount of vegetable oil, salt and sugar indicated in the recipe and mix well. Put the saucepan on low heat and simmer the adjika under a closed lid for 30 minutes. At the end of stewing, add vinegar and finely chopped hot peppers to the adjika.

While the adjika is stewing, sterilize in any way small jars for the workpiece and the lid. Arrange hot adjika in jars.

Seal the jars, turn them over onto the lids and leave to cool under a thick towel. Then transfer the adjika to a storage location. You can serve it with any dish instead of ketchup.
