Armenian red pepper adjika

Spicy, spicy adjika is an ideal pairing with red meat and various meat dishes. Cooking adjika for the winter does not take much time, it tastes better than the purchased one and turns out to be cheaper. Tomatoes, peppers and herbs make a wonderful ensemble despite their simplicity.

Rinse the tomatoes and remove the skin from them, after scalding the fruits with boiling water. Cut the tomatoes into wedges, then beat them thoroughly in a blender until puree. Pour the tomato puree into a convenient cooking container and put on fire.

Rinse the peppers, remove the seeds, and then cut them into small pieces. Add pepper to a saucepan with boiling tomato puree, stir, boil for about ten minutes. Then pour in vegetable oil and leave on the lowest heat for an hour.

Rinse and dry the greens, and then cut them into small pieces. Add salt, spices, garlic to the herbs and beat well with a blender.

Add a mixture of herbs and spices to the ready-made adjika and mix well. Then pour the vinegar into a saucepan, stir the adjika again and cover until it cools completely.

Put the cooled adjika in sterile and dry jars, then tightly seal it with sterile lids and store in the refrigerator or cold cellar.
