I want to share one of my favorite adjika recipes. This adjika is constantly cooked in our family. The cooking process is simple and fast. Ajika from tomatoes contains a large amount of useful vitamins.

Wash the tomatoes thoroughly, cut them lengthwise and remove the stalk. Peel the garlic and rinse. Wash the hot peppers and then remove the seeds and core. Pass all ingredients through a meat grinder. Then pour the mixture into a deep container. Add the required amount of table salt, granulated sugar and table vinegar and mix thoroughly.

For a softer consistency, use a hand blender or food processor. Prepare the jars, wash them thoroughly and sterilize them in the microwave or oven. Boil the lids in a saucepan or pour over boiling water. Put the finished horseradish-free tomato adjika in sterile jars. Screw on with sterile caps.

Store raw horseradish-free tomato adjika in the refrigerator. For a thick adjika consistency, choose ripe, fleshy tomatoes.

Serve the prepared adjika with fresh bread. I really like to spread this adjika on a piece of rye bread, and put a piece of salted bacon or smoked brisket on top.
