Homemade tomato and zucchini adjika is an amazing winter snack! Of course, spices can be added to taste, but otherwise it's best to follow the recipe. Then the adjika will turn out to be moderately thick, very juicy and aromatic. And it will be an addition to many other dishes!

We wash all the vegetables, remove the stalks, peel the carrots, cut the peel from the zucchini.

Peppers and zucchini are peeled from seeds.

All ingredients need to be twisted through a meat grinder, except for the garlic.

Add vegetable oil, granulated sugar, tomato paste, salt, pepper, and crushed horseradish root to the chopped vegetables.

We put the mass on the fire, bring it to a boil and continue to cook for 40-50 minutes, until the adjika thickens. In 10 minutes. until ready, add table vinegar and stir.

We put adjika in sterilized jars and roll up. Turn them over onto lids and leave to cool at room temperature. You can also cover them with a blanket to be sure.
