The rich and bright taste of adjika will remind you of the last summer season and fresh vegetables in winter. Carrots and apples give the dish a unique palette of flavors, without which you cannot imagine cooking adjika.

Peel the carrots, cut out the core and seeds of the pepper and wash the prepared vegetables under running water.

Grate the carrots.

Twist the tomatoes in a meat grinder in mashed potatoes, after cutting out the place where the stalk is attached.

Grind the bell peppers and hot peppers in mashed potatoes as well.

Divide the apples into 4 pieces with a knife and remove the core. Grind them in a blender or with a meat grinder.

Place all ground food in a saucepan and stir. Place on the stove and cook after boiling for 60 minutes over low heat. Add oil, loose spices, finely chopped garlic and vinegar.

Stir adjika and immediately distribute into sterile jars and seal. Turn the container over onto the lids and cover with a towel for a day.
