The most important thing in this recipe is ripe and not spoiled tomatoes and peppers. It's great if the vegetables are homemade, from your own garden, so the adjika will be even tastier. Adjika turns out to be spicy and very fragrant.

Rinse ripe tomatoes well under running water and cut out the place where the stalk is attached. Cut the tomatoes into small pieces.

Transfer the tomatoes to a blender.

Chop the tomatoes to a puree consistency.

Rinse the pepper and remove the stalk with seeds. Peel and rinse the garlic under running water. Chop the peppers into small pieces and chop them together with the garlic in a blender.

Pour oil into a saucepan and heat a little. Transfer the chopped tomatoes, stir and cook over low heat for 15 minutes, stirring without covering. Transfer the garlic and peppercorns to the tomatoes, stir and cook for another 15 minutes.

Add sugar, salt to the sauce and after boiling, grind the mass with an immersion blender and bring to a boil again. You can exclude the last process if you are satisfied with the consistency of adjika. Pour in vinegar, stir and place in sterilized jars. Screw the lids back on, turn the container upside down and wrap it up with a warm cloth.
