Saturated dry adjika can only be obtained without adding tomatoes to the dish. Tomatoes give adjika softness and wateriness, and without them the appetizer comes out very dense, dry and spicy. This recipe is based on sweet peppers, which favorably emphasize the taste of adjika and make it rich in color.

Rinse the bell peppers in running water, then peel them of the seed basket and remove the stalks. Peel hot peppers in the same way, and then cut the peppers into not too small pieces.

Pass the peppers through a meat grinder or use a blender to make a homogeneous mass.
