Adjika from Ugorka plums

Adjika from two types of pepper and plums with garlic are prepared in the classical way: twist in a meat grinder, boil and roll up. Nothing complicated, but the taste of such adjika is noticeably different from its counterparts: it has a sweetish smell of plums and a sweet and sour taste.

Sort out plums, sort out damaged and rotten fruits.

Wash the plums in several waters and put them on a sieve or colander to dry.

Remove the seeds from the drain and discard.

Pass the plums through a fine mesh meat grinder. Put a saucepan with plums on low heat without adding water. The plums will begin to gurgle and give off a lot of juice.

Wash the peppers, remove the seed box from sweet peppers. Peel the garlic and pass through a press. Add the mass to the plums, wait for a boil, cook over low heat for 20 minutes.

In 5 min. before the end of cooking, add salt and granulated sugar, stir. Transfer adjika to sterilized jars and roll up with sterile lids. Turn the jars over to the lids, cover everything with a warm blanket and cool completely. Transfer seaming to a cool, dark place.
