Adjika from green and red tomatoes

Adjika is a hot sauce that can be made from ripe tomatoes, green tomatoes, plums, or juicy apples. I propose to cook adjika from green tomatoes with the addition of red ripe fruits. The sauce turns out to be rich and quite spicy. The amount of hot peppers and garlic can be reduced according to your requirements.

Ingredients

Cooking process

step 1 out of 13
Wash green tomatoes, red tomatoes, bell peppers and hot peppers thoroughly. Cut the tomatoes into several pieces, removing the stalk. Peel the seeds and core from the pepper, cut into slices. Peel the garlic and rinse. Put the red tomatoes in a blender bowl and chop until smooth.

Put chopped red tomatoes in a deep container. Put slices of hot and bell pepper in a blender bowl, also grind until smooth.
step 3 out of 13
Put the chopped peppers in a container with chopped red tomatoes.

Now it was the turn of the green tomatoes. Place them in a blender bowl and chop. Instead of a blender, you can use a meat grinder or food processor.
step 5 out of 13
Thus, chop all green tomatoes and send to the container with the rest of the vegetable mass. Mix thoroughly.
step 6 out of 13
Place the peeled garlic in a blender bowl and chop. For better chopping, add some vegetable oil.
step 7 out of 13
Put chopped vegetables in a deep container with a thick bottom and put on medium heat, bring to a boil and reduce heat. Cook adjika for about 50-60 minutes.
step 8 out of 13
Then add the chopped garlic to the cooked vegetable mass.
step 9 out of 13
Next, send the required amount of rock salt and granulated sugar into the container.
step 10 out of 13
Pour in vegetable oil.
step 11 out of 13
Then pour in the vinegar.
step 12 out of 13
Stir the adjika thoroughly and simmer for another 10-15 minutes after boiling. Wash the jars thoroughly and sterilize in the microwave or oven. Boil the lids in a saucepan.
step 13 out of 13
Pour hot adjika into sterile jars with a ladle. Screw on with sterile caps. Turn hot jars of adjika upside down. Wrap in a warm blanket and leave to cool completely. Then store in a cool, dark place. Be sure to remove the sample by spreading the savory food onto a slice of fresh bread.

Bon Appetit!
