Adjika with apples Antonovka

"Antonovka" is a variety of sweet and sour apples, from which many sweet dishes can be prepared. But I want to propose a recipe for an unusual adjika with this variety of apples. I often cook such adjika in a fruitful year for apples. Adjika with apples is perfectly stored and is in no way inferior to adjika made from tomatoes.

Prepare the necessary ingredients for the apple adjika. Wash the carrots, dry and peel them with a vegetable peeler. Wash apples, tomatoes, bell peppers and hot peppers thoroughly.

Grate the peeled carrots on a coarse grater, then put them in a metal container with a thick bottom.

Peel the apples, and then grate on a coarse grater. Place in a container with carrots.

Peel the tomatoes. Peel the bell peppers and hot peppers. Pass the vegetables through a meat grinder or chop until smooth with a blender, then pour over the rest of the ingredients. Place the container on medium heat and bring to a boil. Reduce heat and cook adjika for about an hour, stirring occasionally.

Peel the garlic and rinse under water. Then chop with a sharp knife, pass through a press or grate on a fine grater. Add to the vegetable mass. Then pour in the required amount of vegetable oil and table vinegar, add granulated sugar and table salt. Mix thoroughly.

Wash and sterilize jars in the microwave. Boil the lids in a saucepan. Spread hot adjika in sterile jars. Roll up sterile lids with a seaming machine. Turn hot jars upside down. Wrap in a warm blanket and leave to cool completely for about a day. Then store in a dark place.
