Adjika is a seasoning that has many recipes. Adjika can be raw or cooked. Today I want to share an interesting recipe for adjika with apples, carrots and bell peppers.

Prepare the necessary ingredients for the apple, carrot and pepper adjika. Wash the carrots, dry and peel them with a vegetable peeler. Wash apples, tomatoes, bell peppers and hot peppers thoroughly. Peel the onions and rinse them under water.

Cut the apples into 4 pieces and peel them. Peel the tomatoes and cut into several pieces. Peel the bell pepper from the core and seeds. Cut the peeled onions into several pieces.

Pass the prepared ingredients through a meat grinder or grind until smooth using a blender or food processor.

Pour the chopped tomatoes into a deep metal dish with a thick bottom. Place the container on medium heat and bring to a boil. Then add chopped carrots, apples, onions and bell peppers one by one. Mix thoroughly. Reduce heat and cook adjika for about 1-1.5 hours, stirring occasionally.

Rinse the parsley and dill thoroughly under cold running water, shake off excess moisture. Pass the peeled garlic and herbs through a meat grinder.

Add chopped parsley and dill, hot pepper and garlic to the hot vegetable mass. Then add the required amount of granulated sugar and table salt. Mix thoroughly.

Pour in vegetable oil and vinegar, stir and cook for another 30 minutes. Wash the jars well and sterilize in the microwave or in a water bath. Boil the lids in a saucepan or pour over boiling water.

Spread hot adjika in sterile jars. Screw on with sterile caps or roll up with a seaming machine. Turn hot jars upside down. Wrap in a warm blanket and leave to cool completely for about a day.
