Adjika with apples, raw

This adjika is without tomatoes. Sweet peppers and apples are used to create this thick, spicy sauce. Apples add sourness to the sauce and soften the spiciness a little. And the preparation is very quick and easy.

Wash all vegetables and pat dry with a towel.

Remove the seeds from the pepper, cut out the seed box and chop it into large pieces.

Rinse the peeled garlic under running water and blot with a napkin.

Wear gloves before handling hot peppers. Rinse it and remove the stalk. Remove seeds from it.

Rinse the apples, preferably using Antonovka or another sour variety. Chop the fruit into large pieces, removing the core.

Pass the vegetables through a meat grinder or chop them in a food processor. Transfer the vegetable puree to a bowl.

Pour sugar and salt into it and pour in vinegar.

Stir the preparation and leave for 30 minutes, letting it brew well. Distribute the adjika in sterile jars, close the lids and refrigerate.
