I would like to offer a wonderful recipe for adjika with plums and tomatoes. For adjika with plums, sweet and sour plums are used. For this recipe, I recommend using sweet plums.

Wash the tomatoes thoroughly, dry them and cut into several pieces, after removing the stalk. I advise you to use ripe, meaty tomatoes.

Wash the bell peppers and hot peppers thoroughly. Peel hot and bell peppers from seeds and cores with partitions. Cut into several pieces.

Wash the plums thoroughly. Cut the plums lengthwise and remove the seeds. Peel the garlic and rinse. Adjust the amount of hot pepper and garlic depending on your own taste preferences.

Grind the cleaned ingredients through a meat grinder or chop with a food processor, you can also use a blender. Then put the mass in a saucepan with a thick bottom, in which you will cook adjika with plums and tomatoes. Add the required amount of granulated sugar and table salt. Place the container on medium heat and bring to a boil.

Pour in the required amount of vegetable oil. Reduce heat and cook adjika with plums and tomatoes for about 40 minutes, stirring occasionally and skimming off the foam. Prepare the jars, wash them thoroughly and sterilize them in the microwave or oven. Boil the lids in a saucepan or pour over boiling water.

5 minutes before cooking, pour in the vinegar and mix thoroughly. Remove the container from the heat and carefully spread the hot adjika in sterile jars. Screw on with sterile caps. Turn hot jars of adjika upside down. Wrap in a warm blanket and leave to cool completely for about 12 hours.
