Alexandria Easter cake with baked milk and cognac

Cognac gives baked goods a special aroma and splendor. It can be added directly to the dough itself, or you can soak raisins and other dried fruits in it. Depending on preference, it can also be replaced with rum or liqueur.

It is better to prepare the dough in the evening so that it has time to infuse for at least 6 hours. In a deep bowl, combine the eggs and sugar until completely dissolved.

Heat the milk in a small container, crumble the compressed yeast into it and add a couple of teaspoons of sugar. Mix everything until the dry ingredients are completely dissolved. Let the mixture sit for a couple of minutes.

In the meantime, melt the butter. Or you can take it out of the refrigerator an hour before cooking to soften it, then you can simply cut it into small pieces and add to the dough. Pour in the diluted yeast there and mix everything thoroughly until smooth.

Cover the resulting mass with a towel and leave for 7-8 hours at an air temperature of at least 22-23 ̊С. During this time, the dough will rise and fall, and the oil will exfoliate and form a dense crust with cracks and craters.

Pour the raisins with boiling water, let stand for 30 minutes, then pat dry with a towel and soak in cognac for 1 hour. When the dough is infused, add to it the saturated raisins, vanilla sugar, cardamom, a little lemon zest and sift the flour through a fine sieve.

Knead the dough thoroughly until smooth. If you do this with your hands, grease them with a small amount of vegetable oil, because the dough is very tender and will stick. Knead for 10 minutes, then cover with a towel and leave to rise for 1 hour, wiping occasionally.

Cover the prepared molds with parchment or use special paper forms for cakes. Fill them with dough a little more than halfway and leave for 1 hour, covered with a towel before the tops do not dry out.

Preheat the oven to 180 ̊С and remove the risen cakes in it. On average, they will bake for about 30 minutes. Depending on the size, this may take a little more or a little less time; readiness can always be checked with a wooden skewer. If it comes out of the baking dry, it means that the cake is ready. Remove from oven and cool to room temperature.

Meanwhile, combine the egg whites and the icing sugar to make the icing sugar. Pour the cooled cakes with it on top, decorate with pastry sprinkles and serve to the festive table.
