Watermelon gazpacho

The Spanish cold gazpacho soup is made from mashed raw vegetables, the base of the dish, as a rule, necessarily includes tomatoes. In addition to the traditional vegetables for gazpacho, the recipe may include watermelon. This unusual soup is perfect for a vegetarian menu.

Wash the cucumber, peel and cut into several pieces.

Wash the tomatoes, make cross cuts on them, dip them in boiling water for 1-2 minutes. Then, starting from the cuts, remove the skin, chop the pulp.

Cut off the green rind from the watermelon, remove the seeds, cut the pulp into pieces. Put chopped tomatoes, cucumber, onion quarter, watermelon, basil, freshly ground pepper and olive oil in a blender bowl. Whisk all ingredients until smooth, and season with salt to taste.
