Armenian sweet pilaf with dried fruits

Armenians prepare sweet pilaf with dried fruits for Easter. The composition includes crumbly, "fluffy" rice, dried fruits stewed in butter, nuts and spices. The dish is very colorful and quite satisfying. It is important not to spare the butter when cooking - it is it that provides a mild sweetish-creamy taste and tenderness. Ideally, this should be ghee.

Ingredients

Cooking process

step 1 out of 7
Put the rice in a sieve, put it in a bowl and fill the rice with water. Thus, we rinse the cereals in several portions of water. The last water should be completely clear from the cereal.
step 2 out of 7
Pour one and a half liters of water into a saucepan, add some salt to it and bring to a boil. Place the washed rice in boiling water and cook until tender for twenty to twenty five minutes. At the end of cooking, we taste the grains and evaluate the degree of readiness so as not to be mistaken. After cooking, put the rice in a colander, rinse well with warm water and let all the moisture drain.
step 3 out of 7
We prepare dried fruits. Dried apricots and both types of seedless raisins are thoroughly washed with warm water and spread on a towel to dry. Then we cut the dried apricots into small pieces, approximately commensurate with the raisins. Coarsely chop the walnuts with a knife.
step 4 out of 7
Put butter in a frying pan and melt it to a liquid state. Pour dried apricots and raisins into the oil, fry the dried fruits over medium heat for three to four minutes, until they warm up well and soften. Stir all the time. Then add chopped nuts, mix and keep on the stove for a couple of minutes. Put half of the prepared mixture with a spoon from the pan on a separate plate.
step 5 out of 7
Put boiled and dried rice into the remaining dried fruits with butter, add turmeric, mix everything together and heat on the stove until the rice becomes hot and absorbs the oil.
step 6 out of 7
Put the finished pilaf on a serving dish with a slide.
step 7 out of 7
On the surface of the pilaf, lay out the previously laid-off dried fruits. We serve the dish hot.
Bon Appetit!
