Armenians prepare sweet pilaf with dried fruits for Easter. The composition includes crumbly, "fluffy" rice, dried fruits stewed in butter, nuts and spices. The dish is very colorful and quite satisfying. It is important not to spare the butter when cooking - it is it that provides a mild sweetish-creamy taste and tenderness. Ideally, this should be ghee.

Pour one and a half liters of water into a saucepan, add some salt to it and bring to a boil. Place the washed rice in boiling water and cook until tender for twenty to twenty five minutes. At the end of cooking, we taste the grains and evaluate the degree of readiness so as not to be mistaken. After cooking, put the rice in a colander, rinse well with warm water and let all the moisture drain.
Put butter in a frying pan and melt it to a liquid state. Pour dried apricots and raisins into the oil, fry the dried fruits over medium heat for three to four minutes, until they warm up well and soften. Stir all the time. Then add chopped nuts, mix and keep on the stove for a couple of minutes. Put half of the prepared mixture with a spoon from the pan on a separate plate.
