Assorted cucumbers and tomatoes for the winter in 3 liter jars

Recently, I got used to cooking assorted cucumbers and tomatoes in 3-liter jars for the winter. So vegetables are eaten faster and do not sour in the refrigerator. The vegetables are crispy and juicy, perfect as a snack for any occasion.

First of all, wash and sterilize the jars in the microwave, oven or water bath. Wash the cucumbers and tomatoes. Cut off the tips of the cucumbers. Rinse hot peppers, celery leaves, and dill umbrellas. Peel the onions and garlic. Cut the onion into rings. Peel the horseradish root.

Place dill umbrellas, celery sprigs, onion rings, garlic, a few pieces of horseradish root and half of hot pepper on the bottom of sterile jars. Place the cucumbers vertically in the jar. Choose medium cucumbers, preferably the same size. Top with a couple of celery sprigs.

Pierce the tomatoes around the stalk with a toothpick in several places. This is done so that they do not crack. Then lay them on top of the cucumbers. Choose tomatoes that are strong and small in size. Place a slice of hot pepper and celery leaves on top.

Pour boiling water over the lids or boil in a saucepan. Fill the filled jars with pre-prepared boiling water.

Cover with sterile lids and let sit for about 25-30 minutes.

Pour about 2 liters of water into a saucepan, add granulated sugar and salt, stir and put on medium heat. Bring to a boil and simmer for about 5 minutes. Drain the water from the cans, and pour the vegetables with the prepared marinade, cover with lids and leave for 10-15 minutes.

After the time has passed, carefully drain the water into the pot using the perforated lid. Put on fire, add pepper mixture.

Bring to a boil and pour in the apple cider vinegar. Stir and immediately remove from heat.

Using a ladle, pour the marinade over the jars with assorted cucumbers and tomatoes.

Roll up jars of vegetables with sterile lids using a seaming machine, turn them upside down. Then wrap it up in a warm blanket or towel and leave in this position until it cools completely for about a day.

Then turn the jars over and transfer to a cool, dark place for storage.
