Quince in syrup for the winter with slices

Quince wedges in syrup are a great alternative to regular jam. Perfect for decorating homemade cakes, and also a great filling for open cakes. And if there is no time to prepare complex desserts, then quince slices in syrup will themselves become a full-fledged treat for tea.

Wash the quince. Remove the stalks from it. Cut into 4 pieces. Core each quarter and then cut into slices about 1 cm thick.

Transfer the prepared quince slices to a deep saucepan and fill with boiling water (for convenience, the water can be brought to a boil in a kettle). Cook the quince slices over low heat for about 15-20 minutes. Please note that during cooking, the slices should not become very soft, since then they will be cooked in syrup.

After the initial heat treatment, discard the quince slices in a colander. The colander should be placed over a saucepan or bowl so that the liquid in which the quince was boiled flows into it. After only quince slices remain in the colander, transfer it under the tap and cool under cool running water.

Get busy making syrup. Pour sugar and citric acid into the broth of quince. Place on the stove and heat, stirring until the sugar is completely dissolved. Place the cooled quince slices in hot syrup and cook over low heat until slices are tender.

Arrange the finished quince slices in pre-sterilized and dry jars. Pour the sugar syrup over them all the way to the top and screw the lid tightly. Cool the wedges completely in the syrup and store in a cool, dark place (storage room, cellar).
