Today we will prepare delicate lace pancakes with you. Openwork they are obtained by saturating the dough with air bubbles. The saturation of the dough occurs during the addition of slaked soda to it. When the air bursts in a frying pan, voids appear on the pancake and the pancake looks like an openwork. The more soda, the more delicate the pancakes. The main thing is not to overdo it, because the taste of soda is not exactly what you want to feel in pancakes.

Pour milk heated to 40-45 degrees into a deep bowl, add eggs, salt and sugar. Beat the dough with a whisk until fluffy. Then add vinegar slaked soda and sifted flour into the dough. Knead the dough well so that there are no lumps.

At the very end of the kneading, add vegetable oil to the dough, mix well and leave the dough at room temperature for 50-60 minutes. The dough will infuse, and the pancakes will be more fluffy.

Lubricate the pan with a little vegetable oil and pour 2-3 tablespoons of dough into the center of the pan.
