Delicate eggplant caviar, as in the store, is not difficult to cook at home. The appetizer is suitable for sandwiches, as well as a sauce for meat or a side dish.

Cut the eggplants in advance and fill with cold water and cover with 1 tablespoon of salt. Chop the onion, grate the carrots. Then fry the onions and carrots until transparent.

We squeeze out the eggplants from water, lightly fry. Scald the tomatoes with boiling water, peel them off and grind them in a blender or meat grinder along with the rest of the prepared vegetables.
