Wash the eggplants, dry them on a kitchen towel. If necessary, remove the thick skin from the eggplant. Cut the eggplants into cubes. Wash, peel and dice the carrots. Pour carrots into boiling oil, fry them until golden, then remove from the cauldron into a separate container.
