Wash eggplants under cold water, dry on a kitchen towel. Cut off the stem from each eggplant. Put the eggplants in a large container, cover with water and leave for a while to leave the bitterness. Then drain the water.

Boil water in a large saucepan, add a little salt to taste. Then dip the eggplants in boiling water. Cook for 10 minutes.
