Eggplant and zucchini in the oven

Oven vegetables are a healthy and tasty dish that is most often used as a side dish. Baked eggplants and zucchini can easily complement meat and fish, and can also become an independent dish on your table.

We wash the young zucchini and cut into thin slices. We do the same with eggplant.

Cut the bell pepper into medium-sized strips.

Chop the onion and garlic cloves. Mix them in a plate with vegetable oil, salt and spices to taste.

Scald the tomato, peel it off and crush it in a separate deep bowl.

Combine a mixture of onions and garlic with crushed tomatoes in a pan, add tomato paste to them and simmer for 3-5 minutes.
