Cooking eggplant on charcoal does not require any special tricks. You just need to choose high-quality vegetables, cut them into not too thin slices so that they do not burn, and use delicious fresh lard. If you follow these simple conditions, an amazing result awaits you!

We wash the eggplants, separate from the stalk. We cut the eggplant across in small pieces 1.5-2 centimeters wide, without cutting through the eggplant.

We cut fresh or salted lard into thin slices, picking up pieces to match the width of the eggplant, put the fat into the cuts.

Prepare a mixture of garlic passed through a press, finely chopped herbs and olive oil, salt and pepper. With the resulting mixture, using a silicone brush, grease each eggplant on top and slightly lubricate the cuts. Leave the eggplants to marinate at room temperature for 15-20 minutes.
