Eggplants for the winter without frying

Everyone in our family is very fond of eggplants. During the fresh eggplant season, I fry them or make vegetable stews and sometimes eggplant caviar. Another favorite for us is the fragrant eggplant without roasting for the winter. A savory snack is obtained with a balanced pleasant taste.

Prepare all the ingredients you need to make an eggplant snack. Wash the ripe and pretty eggplants thoroughly.

Pat dry with paper towels and cut into large cubes. Place the prepared eggplants in a deep container.

Salt and stir well. Leave it on for about 2 hours, covered with a clean kitchen towel.

In the meantime, wash the bell peppers thoroughly and then remove the seeds and cores. Prepare the jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.

Squeeze the eggplants with your hands and place in a deep saucepan.

Wash hot peppers thoroughly and pat dry. Cut into several pieces along with the bell pepper.

Peel the garlic and rinse.

Pass the prepared ingredients through a meat grinder, you can also use a food processor or blender. I chopped with a blender.
