Appetizing eggplants can be prepared for the winter without adding vinegar. This simplifies the task a little and is more suitable for people who try not to eat sour foods and do not use vinegar. Despite the fact that there is no vinegar in the eggplant, the workpiece is stored quite well.

Peel and rinse the onions under running water. Chop it finely with a knife and send it to sauté in a frying pan preheated with vegetable oil.

Rinse the carrots, peel and grate or cut into slices. Send the carrots to the skillet with onions, stir and fry everything together.

Wash the eggplants, cut into small cubes. Place the eggplants in a skillet with carrots and onions, stir and fry, uncovered, for about five minutes.

Add salt and sugar, cover the pan with a lid. Dilute tomato paste with water until puree and add to vegetables. Simmer for twenty minutes after boiling.

Put the vegetable seven from the pan into hot sterile jars, and then immediately roll the blank. Turn the cans upside down, wrap them up - they should remain in this position until they cool down.
