For mushroom lovers, I recommend the recipe for a delicious eggplant appetizer. By taste, no one will even determine that the "mushroom" appetizer is not prepared from mushrooms at all. Winter harvesting turns out to be very appetizing and fragrant. Everyone loves such eggplants, be sure to try cooking.

Prepare all the ingredients you need to make a delicious eggplant snack. Wash the eggplants and hot peppers thoroughly, then pat dry. Rinse the dill thoroughly and shake off excess moisture.

Cut the prepared eggplants into medium-sized cubes or choose a method of cutting vegetables that is convenient for you.

Pour cold water into a deep saucepan, bring to a boil, and then add the chopped eggplants, bring to a boil again and cook for about 5 minutes. This process is done in order to get rid of the bitterness.

Throw the boiled eggplants in a sieve or colander, leave for a while to let the excess liquid glass.

Peel the garlic, rinse under water and pass through a press or chop with a sharp knife. Then place in a small container. Finely chop the dill with a sharp knife and send to the chopped garlic. Combine eggplant and dressing in a deep container. Stir the appetizer thoroughly and leave for a while. In the meantime, prepare the jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.

Put the finished eggplant appetizer in sterile jars. Place the jars with fragrant appetizers in a saucepan, the bottom of which is covered with a kitchen towel. Cover the jars with sterile lids, pour warm water over the hangers of the jars. Put a saucepan with jars over medium heat and bring to a boil. Then reduce heat and sterilize the jars for about 20-30 minutes, depending on the size of the jars.
