Eggplant for the winter light

Eggplant "Ogonyok" is an incredibly tasty and simple vegetable snack for the winter. Appetizing and aromatic, any dish with it turns into a culinary delight!

My peppers and eggplants. Cut the eggplants into circles, about 1 cm thick.

Preheat a frying pan with vegetable oil and fry the eggplant on both sides for 3-4 minutes.

We clean the peppers from seeds and pass them together with the cloves of garlic through a meat grinder. Add salt and sugar to the pepper mixture.

We spread the finished mixture and eggplants in sterilized jars. Pour on top with vegetable oil left over from the eggplant and 2 tsp. vinegar.

We put the cans in a saucepan, pour water into it, a little more than half and put on fire. Bring to a boil and sterilize the jars for another 20 minutes. We roll up the cans and turn them over onto the lids.
