Eggplants with beans are especially appetizing, satisfying and tasty. Excellent preparation for the winter!

We wash the beans and soak them in advance, leave them overnight. In the morning, put the beans on the stove and cook for 60 minutes, until they become soft.

We pass the tomatoes through a meat grinder or grind them in a blender.

Peel the carrots and rub on a coarse grater.

Cut the eggplants into fairly large pieces.

Mix the tomato mass, eggplant, carrots, salt and pepper in a saucepan. We put on fire and after boiling, cook for 40 minutes.
