Ingredients

Cooking process

step 1 out of 13
Prepare all the ingredients you need to make a spicy eggplant snack.
step 2 out of 13
Wash the ripe and pretty eggplants thoroughly. Dry them with paper towels and cut into slices no more than one centimeter thick.
step 3 out of 13
Place the prepared eggplants in a deep container. Salt well and mix with your hands. Leave it on for about 40 minutes, covered with a clean kitchen towel.
step 4 out of 13
Prepare jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.
step 5 out of 13
Rinse the eggplants in cold running water, leave for a while to allow excess liquid to glass, and then blot with paper towels. Sprinkle the eggplants with a little vegetable oil, place on a baking sheet covered with baking paper, and bake for 20 minutes at 200 degrees.
step 6 out of 13
In the meantime, wash the tomatoes thoroughly, pat dry and cut the stalk. Peel the garlic and rinse. Wash hot and bell peppers, and then peel from seeds and core.
step 7 out of 13
Pass the prepared ingredients through a meat grinder, you can also use a food processor or blender. To avoid watery seaming, choose fleshy tomatoes.
step 8 out of 13
Pour the chopped vegetables into a saucepan with a thick bottom, add the required amount of vegetable oil, table salt and granulated sugar. Place over medium heat and bring to a boil.
step 9 out of 13
Then add the baked eggplant, reduce heat and cook the appetizer for 7-10 minutes.
step 10 out of 13
Remove from heat and pour in vinegar, stir gently.
step 11 out of 13
Gently arrange the hot eggplant appetizer in sterile jars and screw with sterile lids.
step 12 out of 13
Turn the eggplant jars upside down. Leave in this state until it cools completely for about a day, wrapped in a warm blanket.
step 13 out of 13
Then, turn the cooled snack jars over and store them in a cool, dark place.

Bon Appetit!
