Banana cupcakes on kefir

Fragrant and delicate cupcakes with banana are an excellent dessert for tea or coffee. The dough is kneaded on kefir with the addition of vegetable oil, so the cupcakes are light and airy. Cinnamon gives the cupcakes a stunning aroma, and a little walnuts give a pleasant nutty aftertaste. The recipe is universal, so if you do not have a mold for cupcakes, you can easily bake a cake from the specified amount of products, the only thing is to increase the baking time to 45-55 minutes.

For the cupcakes we will use ripe, slightly soft bananas. If you want the banana pieces to remain in the dough, mash them with a fork, but if you want to get an even dough texture, grind the bananas in a blender.

Break the eggs into a small container and beat them with a whisk with a pinch of salt.

Put the banana puree in a deep bowl, add kefir, vegetable oil and sugar. Stir all ingredients until smooth.

Put paper tins in a baking dish for cupcakes and fill them 2/3 with dough, during the baking process they will rise. We put to bake in an oven preheated to 170 degrees for 15-20 minutes. We check the readiness with a toothpick.
