Banana pancakes with sour cream

A very simple pancake recipe using sour cream and bananas. It is better to take sour cream fatter - the taste of baked goods will be softer. And bananas should be soft, ideally overripe. They are sweet, soft and blend perfectly into the dough. It is convenient to use a mixer to knead the dough. You need to fry the pancakes over low heat, since bananas tend to burn the dough.

Put bananas peeled and cut into pieces into a bowl. Knead them with a fork in mashed potatoes.

Add sour cream, butter melted to a liquid state, granulated sugar and a pinch of salt. Mix all the ingredients with a mixer until smooth.

Sift the flour along with the baking powder on top of the resulting mass. Mix everything together again with a mixer - the dough is ready. It turns out to be quite thick, but soft and plastic.

Lubricate the frying pan with a small amount of vegetable oil using a silicone brush. Heat the frying pan well on the stove. We collect the banana dough with a tablespoon and put in a pan in the form of small rounded pancakes.

We set the temperature of the plate to medium-low so that the dough has time to bake and does not burn. Do not close the pan with a lid. Fry the pancakes on one side until the crust is browned underneath.

Then turn the pancakes over with a spatula to the other side and continue to fry until they are browned from below. Remove the fried pancakes from the pan and place them on a serving plate. We serve them hot with sour cream, honey, jam.
