Banana muffin in a Redmond slow cooker

Banana baked goods are always recognizable by their specific dark color, special aroma and delicate soft crumb. Unsurprisingly, banana muffins have a lot of lovers. To adjust the moisture content of the banana, add butter to the dough - it will help the cake become more crumbly and porous. For the same purpose, we will add soda. And we recommend using soft, ripe bananas - they are sweet and their texture is good for cake.

Ingredients

Cooking process

step 1 out of 8
Let's prepare the bananas right away. We peel them, place them in a bowl and, one by one, crush them with a fork until they are non-uniform and puree-like. Of course, you can purée with an immersion blender, but in this case there will be no small banana pieces left - they feel very interesting in the finished cake.
step 2 out of 8
Break eggs into a separate bowl and add granulated sugar. Begin to beat with a mixer at low speed, gradually adding revolutions. Beat the mixture until a fluffy light thick foam is obtained. The whipping process should be given at least four to five minutes, since a well-beaten egg base will provide the cake with splendor and porosity.
step 3 out of 8
We soften the butter in the microwave in the “defrost” mode. Or we take it out of the refrigerator in advance so that it has time to acquire a soft consistency. It is better not to melt it to a liquid state. Put the soft butter in the egg-sugar foam, beat for another minute or a half.
step 4 out of 8
Now put the soda quenched in vinegar into the resulting mass and add the sifted flour. Mix everything together at low speed.
step 5 out of 8
Finally, add the previously prepared banana puree to the dough. Mix thoroughly until smooth. The cake dough is ready.
step 6 out of 8
Grease the multicooker bowl with butter. We spread the prepared dough into it, level the surface. We put the bowl in the multicooker, close the lid, select the "Baking" mode for one hour and 20 minutes. We press "Start". After the program time has elapsed, check the readiness of the cake by sticking a toothpick into it: if it comes out dry, the cake is ready.
step 7 out of 8
Turn the finished cake upside down from the bowl onto the wire rack, let it cool completely so that the moist crumb stabilizes and forms.
step 8 out of 8
Sprinkle the completely cooled cake with sifted icing sugar. In a saucepan, heat the cream and put the chocolate broken into small pieces in it. When the chocolate is melted and completely mixed with the cream, remove the saucepan from the stove without boiling. Pour the prepared icing over the banana cake over the icing sugar. Let the chocolate freeze. Cut the cake into portions and serve. The best accompaniment is a cup of aromatic coffee.
Bon Appetit!
