Protein custard with gelatin can be an interesting addition to your homemade cakes and pastries. In taste and consistency, it resembles the famous delicacy "Bird's milk".

Pour gelatin with 40 milliliters of cold water, stir and microwave for 40-45 seconds. The gelatin should dissolve, but not boil.

Carefully separate the whites from the yolks, transfer them to a dry, clean container and beat until a thick white foam.

In a saucepan, combine sugar, water, and citric acid. Put the saucepan on fire, bring its contents to a boil, cook until thickened.

Into the whipped egg whites in a thin stream, add hot sugar syrup, do not stop working with a mixer. The cream should expand well.
