Then, when a lot of air bubbles appear on the surface of the kefir mass, pour the flour sifted onto a sieve in portions. Knead the dough immediately with a spoon and then with your hands until it becomes a homogeneous texture and sticks to your palms. Cover the kneaded dough with a piece of plastic and leave for 15 minutes to prove.
For convenient work with the dough, brush your hands with vegetable oil. First, roll the kefir dough into a roll, then cut into small pieces and form them into thin cakes with a diameter of up to 6-8 cm.
