Birch lemonade

Refreshing lemonade based on birch sap is a delicious drink that will quench your thirst and give you strength. To prepare lemonade, you will first need to freeze lemons - after such a cold treatment, bitterness is lost. This is important because we will use lemons in lemonade along with the crust and seeds.

Wash the lemons, dry them and put them in the freezer for a couple of hours, until they are completely frozen and firm.

After freezing, grind the lemons in a blender until puree.

We spread the citrus puree in a large saucepan, pour in a couple of glasses of birch sap from the total. We put the mixture on the stove and bring to a boil. Cook for two minutes and remove from the stove.

Strain the remaining birch sap through cheesecloth into a saucepan with boiled lemon mixture. Add granulated sugar, citric acid, mix and put on the stove again.

We heat it almost to a boil, but do not boil it. We filter the drink again.

Wash cans, sterilize in any convenient way. We do the same with the lids. Pour hot lemonade into prepared jars. We immediately tighten the jars with sterilized dry lids. We turn the container upside down, wrap it with a warm blanket and leave the juice to cool in this position. We put the cooled jar for storage in a cool, dark place.
