Birch sap as in the store

We offer a recipe for rolling birch sap, as in a store. It has a simple composition and clear proportions. And, importantly, the method is not at all troublesome.

Strain the birch sap through a fine sieve or cheesecloth into a large saucepan to get rid of small random debris.

Add granulated sugar and citric acid. Mix and place on the stove.

We heat the juice to a hot, almost boiling state. Do not bring to a boil.

Wash cans, sterilize in any convenient way. We do the same with the lids. Pour hot birch sap into a prepared container.

We immediately tighten the jars with sterilized dry lids. We turn the container upside down to check the tightness and in this position we leave the juice to cool. We put the cooled jars for storage in a cool, dark place.
