Filter the birch sap through cheesecloth folded in two or three layers. This will remove random small debris. We place the strained birch sap in a saucepan, add granulated sugar and citric acid in the specified proportions, and put on the stove. Bring the mixture to a boil, but do not boil. Remove the foam with a clean slotted spoon.
