Birch juice with raisins for the winter

Raisins and birch sap are an excellent combination that is used not only in the preparation of kvass, but also in preparations for the winter. We try to choose high-quality, pure raisins, which will “unfold” beautifully in the juice and will not let you down with their appearance.

Wash the jar, sterilize it in any way possible. After that, dry the container well. We do the same with the lid. Pour granulated sugar and citric acid into the jar.

Rinse the raisins under running warm water and pour boiling water for five to ten minutes. Then we drain the water, and place the raisins in the jar after the sugar.

Strain the birch sap into a saucepan through cheesecloth folded in two or three layers, then put it on the stove and bring it to a boil, but do not boil it.

Pour boiling juice into a jar with sugar and raisins. We immediately tighten it with a sterilized dry lid using a special wrench.

Turn the container upside down and leave the juice to cool in this position. The raisins will gradually color the juice.
