Birch sap with hibiscus for the winter

An interesting way of harvesting birch sap for the winter is with hibiscus. These bright colorful petals will color the drink in an attractive color and add a delicate specific sourness. Remarkably, we leave the hibiscus flowers themselves in the jar for the winter, without removing them before rolling. They are saturated with juice and taste quite interesting.

For the recipe, we use ordinary dried hibiscus petals, which are sold at any grocery store.

Strain the birch sap through a cheesecloth folded in two or three layers, then place it in a saucepan and put it on the stove. Bring to a boil, but do not boil. Remove the foam with a clean slotted spoon.

Wash cans, sterilize in any suitable way. After that, dry the container well. We do the same with the lids.

Put sugar, citric acid and dry hibiscus petals in jars. Wash the orange and cut it into circles, which we also put in jars.

Pour boiling juice into a jar with sugar, hibiscus and orange. We immediately tighten it with a sterilized dry lid. Turn the container upside down and leave the juice to cool in this position. We put the cooled jars for storage in a cool, dark place. It is advisable to use such a blank during the year.
