Birch sap with citric acid for the winter

Birch sap quenches thirst well and tastes very good. If you want to prepare it for the winter, you can do it without adding additional ingredients and just use citric acid for insurance and sugar for sweetness.

Ingredients

Cooking process

step 1 out of 5
Strain the birch sap through cheesecloth folded in two or three layers to get rid of small debris. Pour the strained birch sap into a saucepan, add granulated sugar and citric acid, and put on the stove. Bring the liquid to a boil. Remove the foam with a clean slotted spoon.
step 2 out of 5
Wash cans, sterilize in any convenient way and dry well. We do the same with the lids.
step 3 out of 5
Pour boiling juice into prepared jars, immediately twist them with sterilized dry lids using a special key.
step 4 out of 5
We turn the cans upside down to check the tightness and leave to cool in this position.
step 5 out of 5
After that, we remove the juice in a cool, dark place for storage. It is advisable to store such conservation for no more than a year.
