Birch sap with lemon and honey

Birch sap can be rolled up without sugar, and honey can be used for sweetness. Lemon will add sourness and a pleasant citrus aroma. When serving such a simple drink, you can add ice, mint leaves and lime circles - in this form, birch sap will "leave" the table very quickly.

Strain the birch sap through cheesecloth into a saucepan and put it on the stove. We heat the juice to a very hot state, but do not boil it.

Wash cans, sterilize in any convenient way. We do the same with the lids.

Rinse the lemon and cut into quarters.

Cut out the pulp and put it in prepared jars. Add honey and citric acid.

Pour hot birch sap into jars with lemon and honey. For convenience, you can use a wide watering can. We close the jars with sterilized dry lids. Turn the container upside down and leave the juice to cool in this position. We store the already cooled cans of juice for storage in a cool, dark place.
