Birch sap with roasted barley

Roasted barley grains give the birch sap drink a very pleasant malty flavor. Such kvass will well quench thirst and enrich the body with useful microflora. The final color of kvass will depend on the degree of roasting of the grains: the blush the barley, the darker the drink.

Pour the barley into a dry frying pan and fry on the stove until dark. Do not forget to stir for an even roast.

We filter birch sap from small debris. Place the juice in a suitable container.

We put granulated sugar, cooled roasted barley grains to the birch sap. We also add the washed raisins.

We leave in a warm place for three to four days. After the kvass gains the desired sharpness, we remove the container with the drink in a cold place, for example, a cellar. In the cold, the fermentation process slows down, and kvass is stored for a long time, for several months.
