Lamb beshbarmak with potatoes

Our housewives often supplement mutton beshbarmak with potatoes. It gives the dish a special satiety and a slightly different taste. The invariable basis of beshbarmak is boiled lamb and dough in the form of rhombuses. The dish has a special way to serve it to the table, this is important. It is not difficult to cook mutton beshbarmak with potatoes at home, and time is spent on boiling the meat.

Cut the lamb, preferably on the bone, into large pieces, rinse and place in a large saucepan. Then fill it with cold water and place it on the stove. When the broth boils, remove the foam from the surface and cook the meat over low heat for 2.5–3 hours.

Half an hour before the end of cooking, put the peeled onions and carrots in the broth, add black peppercorns, bay leaves and salt to your liking.

While the meat is cooking, knead the noodle dough. Break eggs into a bowl for kneading dough, add salt and sifted flour. First, with a spoon, and then with your hands, knead the dough well until a tight homogeneous consistency, as for dumplings.

Roll the kneaded dough into a bun, wrap in a piece of cling film and leave to rest for 30 minutes.

Peel the rest of the onion and chop it into half rings.

Transfer the chopped onion to a separate saucepan, add a little broth, salt and black pepper to it and cook for 2 minutes to keep it crispy.

Roll the rested dough into a sheet up to 3 mm thick, as for dumplings, and then cut it into diamonds.

Remove the cooked lamb from the broth and cut into pieces.

In a separate saucepan, boil peeled and coarsely chopped potatoes until tender. It can also be boiled in meat broth.

Pour some of the broth into another saucepan and cook the prepared beshbarmak noodles in it. Boil the noodles for no more than 5 minutes. Then transfer it with a slotted spoon to a dish for assembling beshbarmak.

Place pieces of boiled lamb on the noodles. Lay a bow on top of it. Place boiled potatoes around the edge of the dish. Lamb beshbarmak with potatoes is ready. You can serve it to the table.
